Low Cholesterol French Fries

4 large         red potatoes pealed

1 cup            olive oil

                    dash salt (optional)

Put olive oil in skillet and heat on medium high (7). Slice potatoes lengthwise about 1/4 inch thick. Cut slices about 1/4 inch lengthwise. Salt potatoes to taste. Put potatoes in hot olive oil. Fry for about 3 minutes or until brown, turn over and fry until the other side is brown. Put on paper towels to drain. Serves 4 5
