Heavenly Spaghetti Sauce
(This Sicilian Sauce is the basis for several Italian dishes including Veal Parmesan, Lasagna & Chicken Cacciatore.)
1 lb. Ground Round (optional) 1 Medium White Onion, diced
1 4-oz. can Mushrooms (optional) 1 tbsp. Garlic, diced
2 15-oz. Cans Tomato Puree 1 tsp. Salt
1 tbsp. Oregano 1 tsp. Sweet Basil
1 Bay leaf 1 tsp. Black Pepper
1 shaker Parmesan Cheese (Optional) 1 tbsp. Worcestershire Sauce
1 tbsp. Brown Sugar (if anyone has a problem with acid from the tomatoes)
If you can’t find Tomato Puree, use 2 15-oz cans of Tomato Sauce and 1 small can of Tomato Paste. Use more or less of the spices according to your "TasteBuds."
Spray pot with Pam. Brown meat on medium high. When meat is almost done add onions and sauté with meat. Add all other ingredients except cheese and bring to a boil. Simmer for one hour. Stir often. Lightly cover Spaghetti and add Parmesan Cheese to taste. Serves 6-8
Serve over
Spaghetti or Spaghetti Squash (better for diabetics)

Pepperonata or Salad & Garlic Bread

Al loved Italian food. I was raised on a farm where we used salt and pepper. We were newly weds. I wanted to please Al. I would cook something; Al would take a bite and tell me how good it was; I would take a bite and cry. I decided that if he could cheerfully eat what I was cooking, I would become an excellent cook. I prayed and asked God to help me. When we went out to eat, God would reveal spices to me that I had never heard of. My first was Spaghetti. I had all the ingredients except one and I couldn’t quite figure out what it was. One night I was watching "Gomer Pile" on TV. Gomer said, "It’s not Spaghetti until you add the Oregano." That was the last ingredient. A year later, we invited a couple over to dinner. I didn’t know that she was Italian and cooked Spaghetti. She took one bite and wanted to know where I got the recipe. I told her about the Spaghetti. She exclaimed, "Oh my God. That’s our family’s secrete recipe. It’s Sicilian. Anyone who gives that recipe to someone who is not family would be disowned and disinherited." With God there are no secrete recipes. John 15:15-16
